HI, I'm not much of a cook, but I do like to have a wonderful meal. I came across nicemeal.com recently. And so far I have only one thing to say - it's great! Since I live in India, most of the mentioned ingredients and so I try out a new recipe each weekend. I haven't been disappointed so far and don't think I ever will be. I have a question on Chinese food. I hope you can help me with. I lived in Eastern Canada for a while and ate Chinese food there. I moved to Western Canada and the Chinese food is altogether different. I don't like the Western style of cooking as much as the eastern style. Is it because of the different styles of cooking from different parts of China. I hope you can help me. Thank You

Danzo reply : I think, the different styles of cooking you tried is not really different style of Chinese cooking, is just cooked by different chefs..... according to your questions, there is a big different about the diets between Northern and Southern China, that is, the dishes made by Northern Chefs are in heavier taste and those are comparably light in Southern Chefs’ recipes, sometimes, we say it is tasty as sweet and fresh in Southern Chinese food. In the Northern and Western Provinces of China like Lingxia, hebei, Sichuan , Shenxi, and Yunnan, the diets are made in hot and spicy, also more salty, it's because of the humid cold weather and high altitude, Chinese people wonder that to perspire is a good method for preventing diseases caused by humidity and cold. Perhaps next time, you consider the restaurant by the style choices, such as Guangdong, Shanghai, Beijing, Sichuan, Yunnan, and so on.....

Hi Danzo. I think your website is great. Found several recipes I would love to try. I have a question though. In your Egg soup in Wine Dreg, you didn't mention when and how to put in eggs...I am not a very good cook...but your website helped me a lot. Can you show how to make Mongolian Beef? also some simple Dimsum?? Thanksss...

Chow Fun aka Chow Fon is a dish of Sha ho Fon (Ribbon Noodles of Rice). Actually Chow Fun means Fried Rice... The Noodles are chewey and take on the flavor of whatever is the suase and meat/vegi. It is the most popular rice noodle of most of the Chinese I know...whether Szechuanese, Cantonese, Mandarines or Hunanese, etc. I believe these Noodles and recipes are Szechuanese in origin....I love em.

Danzo reply : Wow....you are great !!!! Yes, Chow Fon is meant Fried Sha Ho Fon in Guangdong district ..... it is ribbon noodle of rice, however, Chow Fon in Northern China means fried vermicelli ! And, Chinese noodles are divided into many many different sorts such as Shanxi (North-West), Shanghai (East) and Guangdong (South) style ...... all of them have their original recipes.

I've tried your gao li dou sha recipe and Mashed Taro recipe and really liked them. I've always loved gao li dou sha... even tried making it once without any recipes but failed miserably. Thank you very much for posting your recipe here. I tried it yesterday and it was very successful and very simple to do too. Now I can have this dessert in the United States as well! I don't think they serve this dessert here 'cos I've been looking for it at restaurants in the San FRancisco area for a while but never came across it. Keep the recipes coming!

Hi Danzo, I have been visiting your web site for awhile now. Thanks for having such good recipes. But I would like to see more Taiwan cooking. I was born in Taiwan, and I miss the dishes made in Taiwan. Especially the mi fon soup! I have asked around to find the recipe for this soup, but had no luck. Danzo, yes, it's wide rice noodles, usually with beef, but I have had it with just vegetables. I think the noodles used are called "Ho Fun" it comes in a sheet that is cut into wide strips.
